just like mamma used to make

OK I never called my Mum Mamma, and Im pretty sure she never made pasta, but maybe one day my kids will grow up and be able to say that to their kids, as they make fresh pasta with their families!

Yesterday Nathan, Isaac & I decided to try out my pasta machine. Its been sitting in my meat safe for about 18 months. My sister gave it to me for my birthday, and although Ive been wanting to have a go, we had never got around to it. Now I wish I had it out of the box the day it was given to me. Who would have thought that 500g flour and 4 eggs could be transformed into such a delicious dinner.

We were guided by this recipe, but varied our filling a little, it consisted of spinach, ricotta, leaks, parmesan, garlic, salt and pepper - and it was so yummy.

We made the dough, let it rest while we did the filling and then rolled the dough through the machine...I was a little hesitant about this, but it was super easy, and so much fun...


Then we rolled it some more unitl it was nice and thin and long! ....


We put our filling in, floded it over, cut the pieces...


cooked a few test pieces as we went...


Of course there had to be some tastings done to make sure it was yummy.
Jazz LOVED it...


Isaac wasnt keen on the filling, so we put the off cuts of dough back through the machine and made him some "pasta stripes". Served with a little butter and freshly grated parmesan - delish!


The only thing missing in my opinion was some hame made tomato pasta sauce - but since Craig doesnt really like tomato based sauces he had carbonara sauce, parmesan and cracked pepper - even the man of the house enjoyed it!

Oh yeah. There's nothing like home made pasta is there. I used to make it all the time there for a while. I really should make the time again. Except I think that I did probably eat a bit too much of it....

It's a little time intensive and messy, but SO worth it. Next time you have "plastic" pasta you'll wish you'd made it lol! It looks like the kids had a great time too. Fun and good food - win, win!
